This property produces two different wines, Chateau Haut Simard and Chateau Simard. Chateau Haut Simard comes from an 8 hectare parcel and is aged in 50% new, French oak for an average of 12 months. Chateau Simard is produced from a 40 hectare parcel and the wine does not see any new oak for the aging. Instead, the wine of Chateau Simard is aged in concrete vats. On average, Chateau Simard produces close to 12,000 cases per year. Chateau Haut Simard is much smaller, with an average annual production of 2,500 cases per vintage
