The Pascal Jolivet Domaine covers 49.50 acres in Sancerre, with vineyards close to the villages of Bue, Verdigny and Ste. Gemme. The Sauvignon Blanc grapes are produced in solis composed of 50% limestone, 30% chalky clay, and 20% flint. The philosophy of the estate is to allow nature to take its course, as much as possible. The grape juice is fermented naturally, without adding cultivated yeasts, producing a Sancerre with a well defined style: finesse, elegance and perfect balance.
